EGG AND TOMATO STIR FRY
3 to 4 eggs
2 large tomatoes cut into wedges
1 teaspoon chopped garlic
1 teaspoon chopped ginger
4 to 5 tablespoons cooking oil + 3 tablespoons cooking oil
2 tablespoons light soy sauce
1 teaspoon sesame oil
3 tablespoons black vinegar
1 tablespoon apple cider vinegar
3 tablespoon brown sugar
1 to 2 tablespoons Chinese oyster sauce
1/4 cup water
1 teaspoon cornstarch in 3 tablespoons water
1/3 cup chopped green onions
Beat 3 eggs with a whisk or fork. Preheat a pan with 4 to 5 tablespoons cooking oil.
Pourt eggs into a pan and scramble eggs. Cut into smaller pieces if required. Put eggs aside.
Preheat pan at medium heat. Add cooking oil. Then add chopped ginger
and chopped garlic. Stir fry briefly. Add tomato wedges. Stir fry briefly. Add light soy sauce, sesame oil, black vinegar, apple cider vinegar and brown sugar. Stir fry briefly. Add Chinese oyster sauce. Add 1/4 cup water and bring to a boil. Add cornstarch solution to thicken sauce. Add eggs and mix in. Garnish with green onions. Enjoy!
