So does the Apple Watch Ultra look better after time? The Ultra has been my goto Apple Watch for the last 4 months and in this video, I compare the wear and tear of the Ultra to my aluminum bodied and stainless steel bodied Apple Watches.
TL:DR - The Apple Watch Ultra looks pretty good after 4 months. Damage shows up in different areas but overall still looks good.

The screen of the Apple Watch Ultra after 4 months looks the same as day 1. With all my other Apple Watches, I usually end up with a big gash across the front of the screen around the 2-3 month mark. This hasn't happened with the Ultra.
The watch face is made with a Sapphire crystal so it is extremely scratch resistant BUT the big thing is the design of the body. It basically hugs the screen preventing anything from hitting the edge of the device. The screen also sits recessed into the watch body which adds to the scratch protection.
When it comes to the body, the aluminum Apple Watch's will look a bit better. The titanium body of the Ultra seems to scuff a little easier than other devices like the aluminum Series 7 and Series 8's. The body definitely doesn't look as beat up as my Stainless Steel Apple Watch.
